Chunky Vegetable Meat Sauce

1 red bell pepper (diced)
1 yellow bell pepper (diced)
1 green bell pepper (diced)
1 orange bell pepper (diced)
1 zucchini (chopped)
1/4 large cabbage (diced)
2 large carrots (chopped)
1 cup button mushrooms (chopped)
1 yellow onion (diced)
2 garlic cloves (minced)
2 lbs extra lean ground beef
3 cups canned crushed tomatoes
2 cups canned whole tomatoes in juice
1 small can tomato paste
2 cups water
spices – oregano, basil, parsley, salt, pepper (as much as you want)

Cook ground beef and place in a large pot

Add crushed tomatoes, whole tomatoes in juice, tomato paste, water and spices to the beef and stir

Add in all your vegetables, stir and let simmer for 1-2 hours

Makes 10 servings,
