A Different Carrot Raisin Salad

We all have our favorite recipes that we make over and over again. With the changing of the seasons, I am always looking for new recipes to try out on my family. One recipe that is a staple at our house is carrot raisin salad! This recipe has never let me down, but it’s time to shake things up with this different version! It’s still got carrots and raisins in it, but there are also some walnuts thrown in for good measure. The dressing consists of just honey and orange juice instead of mayo or other unhealthy ingredients found in most dressings.

¼ teaspoon salt

¼ cup finely chopped celery

1 cup raisins

3 large carrots, shredded

1 tablespoon cider vinegar

2 tablespoons shredded coconut

½ cup mayonnaise

1 cup walnuts

½ teaspoon white sugar

2 tablespoons sour cream


In a medium bowl, combine shredded carrots, raisins, walnuts, celery, and coconut. Whisk together mayonnaise, sour cream, vinegar, sugar, and salt. Stir dressing into carrot mixture. Chill a few hours before serving.
