Amber’s Zucchini Bread

I love to bake, but I don’t always have time. This easy zucchini bread recipe is perfect for when you want something sweet, but don’t have the time or ingredients to make anything more complicated. It also makes a great gift!

Ingredients:

2 teaspoons ground nutmeg

1 cup vegetable oil

¾ cup egg substitute

2 cups grated zucchini

2 tablespoons baking soda

2 teaspoons vanilla extract

3 cups all-purpose flour

2 cups white sugar

1 tablespoon ground cinnamon

1 teaspoon salt

1 teaspoon baking powder

Instructions:

Preheat oven to 350 degrees F (175 degrees C). Grease 2 – 8×4 inch loaf pans.

In a large mixing bowl, combine zucchini, egg substitute, sugar, vegetable oil, and vanilla extract.

In a medium size mixing bowl, mix together flour, salt, baking soda, cinnamon, nutmeg, and baking powder. Gradually mix dry ingredients into the zucchini mixture. Pour batter into the prepared loaf pans.

Bake for 40 to 60 minutes.
