Apple Cider Beef Stew

Eating out of the house is usually a nice way to have some time away from the kids, but it can be expensive. You know that feeling when you’re just about to order your favorite dish at the restaurant only to find out they are completely sold out? That’s happened to me on more than one occasion. I was so frustrated because I had been looking forward to my meal all day! So now I’ve learned how easy it is make this hearty apple cider beef stew recipe right in my own kitchen. This delicious dish will warm up your home and satisfy your cravings for an affordable price!

1 large bay leaf

½ teaspoon dried thyme

1 large McIntosh apple, sliced

2 teaspoons salt

3 tablespoons all-purpose flour

¾ cup water

2 pounds cubed beef stew meat

3 potatoes, cubed

3 tablespoons olive oil

1 teaspoon ground black pepper

2 celery stalks, chopped

¼ cup apple cider vinegar

2 ½ cups apple cider

2 onions, diced

4 carrots, sliced


Combine flour, salt, pepper, and thyme in a bowl. Toss beef cubes in the flour mixture.

Heat olive oil in a Dutch oven or large pot over medium-high heat. Working in batches, brown beef cubes on all sides. Combine browned meat, apple cider, water, and cider vinegar in the pot and bring it to a boil. Add bay leaf; reduce heat to low. Simmer, partially covered, for 1 hour.

Stir in carrots, potatoes, onions, celery, and apple and simmer until the vegetables are tender, about 1 hour more.
