You are invited to join me this summer for a BBQ chicken recipe that is easy, delicious and made with ingredients that you probably have on hand. I know all too well how hard it can be to get dinner on the table after a long day of work or play. The best part about this dish is it can be prepped ahead so when dinnertime rolls around you’ll have something quick and simple to whip up!
prep: 20 mins cook: 1 hr 30 mins total: 1 hr 50 mins Servings: 12 Yield: 12 servings
12 chicken thighs, skin removed
2 tablespoons vinegar
3 tablespoons ketchup
4 tablespoons water
1 teaspoon dry mustard
1 tablespoon lemon juice
2 tablespoons Worcestershire sauce
3 tablespoons brown sugar
1 teaspoon chili powder
1 teaspoon salt
Preheat the oven to 500 degrees F (260 degrees C). In a small saucepan over medium heat, stir together the water, ketchup, brown sugar, vinegar, lemon juice, and Worcestershire sauce. Season with salt, mustard powder, and chili powder. Simmer the sauce for 15 minutes.
Place the chicken thighs into an oblong baking dish, and pour the sauce over them. Cover tightly.
Bake for 15 minutes in the preheated oven, then reduce the temperature to 300 degrees F (150 degrees C), and bake for one hour. Remove cover, stir and bake uncovered for 15 minutes.
