Bauernomlett (Farmer’s Omelet)

Omelets are a healthy and easy breakfast option. This Farmer’s Omelet recipe is perfect for the whole family, with spinach, tomatoes, and cheese to top it off!
I love eggs in any way shape or form. From soft boiled eggs over a breakfast salad to scrambled eggs on toast, I can’t get enough of them. However one of my favorite ways to eat them is in an omelet. They’re quick and easy which makes them great for busy mornings when you need something fast but still nutritious – plus there are so many different things you can add into an omelette that they never get boring!

3 eggs

3 slices bacon, cut into 1/2 inch pieces

1 teaspoon butter

salt and pepper to taste

2 potatoes


Place potatoes in a saucepan covered by lightly salted water. Bring to a boil over high heat, then reduce heat to medium, and simmer until tender, 10 to 15 minutes. Drain and allow to cool, then cut into 1/4-inch slices.

Melt the butter in a skillet over medium heat. Cook the bacon strips in the butter until browned, 5 to 7 minutes; remove bacon and set aside. Add the potatoes to the bacon fat and cook over medium-high heat until browned, about 5 minutes.

Beat the eggs with the salt and pepper. Pour the egg mixture into the skillet, and mix with the potatoes and bacon; allow to cook until eggs are set, 3 to 5 minutes, turning once.
