I’m excited to share this recipe for a berry apricot smoothie that I made with my kids. It’s so delicious and refreshing, it tastes like summer in a glass! You can’t beat the convenience of making it ahead of time and having breakfast ready for the week, or enjoying an afternoon snack on those hot days when you don’t want to turn on the stove. This would also make a great treat after dinner as well. These are some of our favorite ingredients: blueberries, blackberries, strawberries, apricots (fresh or dried), orange juice (or water), honey. Give it a try and let me know what you think!
