When it comes to food, I would say my favorite type is dessert. I love all the sweet flavors and textures in a dessert–the cakey crusts, creamy fillings, and of course the sugary toppings! These berry crumb bars are one of my favorites because they have a wonderfully chewy crust that tastes like your childhood favorite oatmeal cookie. The filling is made from fresh berries that add a burst of tart flavor while still being soft enough to cut into neat squares or triangles. And what’s more? You can whip up these bars in under an hour with minimal ingredients so you get to enjoy them right away!
prep: 15 mins cook: 45 mins total: 60 mins Servings: 15 Yield: 12 -15 bars
3 teaspoons cornstarch
1 cup shortening
1 teaspoon baking powder
1 cup white sugar
4 cups raspberries
1 pinch salt
3 cups all-purpose flour
½ cup white sugar
1 pinch ground cinnamon
Preheat oven to 375 degrees F (190 degrees C). Grease one 13×9-inch pan.
Combine 1 cup of the sugar, the flour, baking powder, salt, ground cinnamon, shortening, and egg. Dough will be crumbly. Pat half of the dough into the prepared pan.
Combine the remaining 1/2 cup sugar, the cornstarch and berries. Place mixture over dough in pan. Crumble the remaining dough over the tops of the berries.
Bake in the preheated oven until top is slightly browned, about 45 minutes.
