This BLT Bow Tie Salad recipe is a healthy option for those days when you’re feeling like your kids need to eat something other than macaroni and cheese, chicken nuggets, or PB&J sandwiches. This salad can be whipped up in about 10 minutes and will feed a family of four so it’s also great if you have guests over! It has all the flavors of a classic BLT sandwich but instead of bread, we substitute bow-tie pasta. The tomato dressing is made from scratch with ingredients that you likely already have at home. ½ head romaine lettuce, torn
2 ½ cups diced fresh tomatoes
1 (12 ounce) package bow tie pasta (farfalle)
1 pinch garlic salt, or to taste
¾ cup mayonnaise
¾ cup ranch dressing
¾ cup cooked crumbled bacon
ground black pepper to taste
1 pinch onion powder, or to taste
Bring a large pot of lightly salted water to a boil. Cook bow tie pasta at a boil, stirring occasionally, until cooked through yet firm to the bite, about 12 minutes; drain. Transfer to a large bowl.
Stir tomatoes, bacon, and romaine lettuce into bow tie pasta. Whisk mayonnaise, ranch dressing, onion powder, garlic salt, and black pepper together in a small bowl. Pour over pasta mixture; toss to coat. Chill in refrigerator for 2 to 3 hours before serving.
