Blue Cheese, Avocado, and Grape Salad

This salad is a great way to get some healthy fats in during the day. It’s also easy to pack up and take with you for lunch, or as part of a picnic at the park! The dressing is light and fresh, so it won’t leave you feeling heavy after eating this delicious dish.

Ingredients:

1 avocado, pitted, peeled and sliced

2 tablespoons shredded Mexican four-cheese blend

1 (10 ounce) bag mixed salad greens

¼ cup blue cheese salad dressing

½ cup red seedless grapes

Instructions:

Divide the mixed salad greens between two large plates or bowls. Place half of the shredded cheese, grapes, and sliced avocado on each serving dish. Drizzle blue cheese dressing on each salad.
