Blueberry Pineapple Salad With Creamy Yogurt Dressing

Blueberry season is short, so every time I come across them in the grocery store I buy as many as my cart can hold. They are usually $3 to $5 a pint and since blueberries don’t last very long, it’s important to find ways to use them before they spoil. One of my favorite summer salads is this Blueberry-Pineapple Salad with Creamy Yogurt Dressing recipe from because not only does it transform two fruits into one delicious salad but also uses fresh mint which pairs perfectly with both ingredients! This sweet salad makes a perfect side or even an appetizer for any meal and your taste buds will thank you for turning something that might have been thrown away into a dish they’ll remember!

¼ teaspoon grated lime zest

3 tablespoons whole-milk plain Greek yogurt

1 (20 ounce) can pineapple chunks in juice, drained, juice reserved

1 cup fresh blueberries

1 teaspoon honey, or to taste


Whisk 1 tablespoon pineapple juice, Greek yogurt, honey, and lime zest in a medium bowl. Fold in pineapple chunks and blueberries until coated with yogurt mixture. Serve immediately.
