Bop’s Broccoli Cauliflower Salad

I just made the best broccoli cauliflower salad that I could find. It’s so simple to make, but it tastes amazing! The dressing is perfect for this time of year, because it’s light and refreshing. You can serve this as a side dish or use it as a main dish for lunch or dinner. Let me know if you try it out!

¾ cup shredded sharp Cheddar cheese

1 head fresh broccoli, diced

5 slices bacon, or more to taste

2 tablespoons white vinegar

¼ red onion, chopped

½ cup creamy salad dressing (such as Miracle Whip®)

1 head cauliflower, chopped

½ cup white sugar


Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and crumble.

Stir broccoli, cauliflower, Cheddar cheese, and onion together in a large bowl.

Whisk creamy salad dressing, sugar, and vinegar together in a separate bowl until sugar is dissolved; pour over broccoli mixture and toss to coat. Refrigerate salad for at least 30 minutes. Stir crumbled bacon into salad just before serving.
