When I was a child, my mom would make us SPAMadillas for breakfast. We loved them! Now that I have kids of my own, they love to help me in the kitchen and this is one of our favorite recipes. Plus it’s super easy to make so you can spend more time with your family instead of slaving away at the stove. Once you try these out, there will be no turning back!

Ingredients:

2 large flour tortillas

3 eggs

½ cup diced SPAM® with Bacon

3 tablespoons your favorite salsa

½ cup shredded Colby-Jack cheese

2 teaspoons water

Instructions:

Preheat a waffle iron according to manufacturer’s instructions. Combine flour, beer, butter, milk, egg yolks, honey, and vanilla in a large bowl; stir until the mixture is smooth. In a separate bowl, beat egg whites until stiff peaks form. Gently fold egg whites into batter.

Spray preheated waffle iron with non-stick cooking spray. Ladle the batter into waffle iron. Cook the waffles until golden and crisp. Serve immediately.
