Bruschetta is a traditional Italian appetizer that is typically served as an open faced sandwich on toasted bread. I love this recipe because it’s simple, quick, and delicious! If you are looking for something new to serve your guests at your next party or family dinner then you must try out this easy bruschetta recipe. Bruschetta makes the perfect accompaniment with any salad or pasta dish. You can also use it as a dip for chips! It’s important not to skip over the step of salting the tomatoes before adding them into the mixture because this helps extract some of their juices which creates a better tasting bruschetta in my opinion. 2 cloves garlic, minced

2 tablespoons chopped fresh parsley

3 large tomatoes, seeded and chopped

4 tablespoons minced fresh basil

? cup extra virgin olive oil

2 tablespoons chopped fresh chives

salt and pepper to taste


In a medium bowl combine tomatoes, parsley, chives, garlic, basil, olive oil, salt and pepper. Cover and refrigerate for at least 1 hour, allowing flavors to meld before serving.
