  • 1/2 cup flour

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 4 boneless, skinless chicken breasts (6 to 8 ounces each)

  • 3 tablespoons unsalted butter

  • 1 large onion, chopped

  • 1 garlic clove, minced

  • 8 ounces sliced fresh mushrooms

  • 2 cups low-sodium chicken broth

  • 1 cup heavy cream

  • 2 tablespoons cornstarch

  • 2 bunches broccoli (6 to 8 spears each), trimmed and cut into 1-inch florets

  • 1/2 cup chopped water chestnuts

  • 1/4 cup thinly sliced green onions

Directions

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place chicken breasts in a single layer on a lightly greased baking dish.
  • In a small bowl, combine flour, salt and pepper; dredge chicken in the mixture.
  • Melt butter in a large skillet over medium heat; sauté onion and garlic until tender. Add mushrooms; cook 5 minutes longer.
  • Stir broth into mushroom mixture; bring to a boil. Reduce heat to low; simmer for 10 minutes.
  • Pour cream over chicken breasts; sprinkle with cornstarch mixed with water chestnuts and green onions.. Bake for 25 minutes, or until bubbly and golden brown on top
