Chicken gnocchi pasta is an easy to make at home 20 minute recipe that is rich in nutrients like calcium, iron and vitamin C. It also contains low carbs for those who are watching their diet or have diabetes. Anyone can make it quickly and easily, which is more time consuming than ordering takeout.
1 pound boneless, skinless chicken breasts, sliced into thin strips
1 tablespoon olive oil
4 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 (14.5 ounce) can diced tomatoes, undrained
2 cups fresh spinach leaves
1 (16 ounce) package gnocchi pasta noodles
1. Boil water in a pot on medium heat then add the olive oil and garlic cloves. Add the chicken strips, salt and pepper to taste. Cook for about 5 minutes before adding the tomatoes and spinach leaves. Cook for an additional 4 minutes on low heat while stirring frequently.
2. Boil the pasta noodles according to package instructions then pour over the mixture of tomato sauce with chicken & vegetables into the pan. Mix all ingredients together, serve and enjoy!
