Ingredients

  • 1 lb. boneless, skinless chicken breasts, cut into thin strips

  • 1/2 cup all-purpose flour

  • 2 tablespoons olive oil

  • 1/2 teaspoon dried basil

  • 1/4 teaspoon garlic powder

  • 1 cup reduced-fat milk

  • 1/4 cup grated Parmesan cheese

  • 4 ounces sliced mushrooms

  • 8 ounces fettuccine pasta

Directions

  • In a shallow dish, combine flour, basil and garlic powder.
  • Dredge chicken in the flour mixture until coated and set aside. In a large skillet over medium heat, heat olive oil.
  • Add chicken strips and cook for 3-5 minutes per side, until golden brown and cooked through.
  • Remove chicken from skillet and set aside.
  • Add mushrooms to the skillet and cook for 3-5 minutes, until softened.
  • Stir in milk and Parmesan cheese and bring to a simmer. Cook for 2-3 minutes, until sauce has thickened. Serve chicken strips and sauce over cooked fettuccine pasta.
