Let the pumpkin recipes begin, shall we? I held off until it is officially September, so you should be very proud of me! Especially since I live in Montana, where the cold mornings begin in August (or sometimes all summer long)!

But this brings me to a point . . . why do we relegate pumpkin to only a few months out of the year? I’m sure it is a cultural thing.

Perhaps it is because the cinnamon, nutmeg, and cloves generally associated with pumpkin give us a warm, cozy feeling. I don’t know! But I do know that I could eat pumpkin any month of the year! (Like this Low Carb Pumpkin Pie, for example!)

My husband rolls his eyes when he sees me bring out the pumpkin, and he delights to tell me that it is not “officially” Fall until the middle of September.

This makes it even more strange that my husband is the one responsible for this recipe!
