FULLY LOADED BAKED EGG CASSEROLE

When it comes to easy weeknight dinners, there’s nothing better than a casserole. This Fully Loaded Baked Egg Casserole is not only easy to make, but it’s also delicious and satisfying.
Here’s how to make it:
1. Start by cooking the Italian sausage in a large skillet over medium heat until it’s no longer pink. Drain any excess fat and add the chopped onion and garlic. Cook until the onion is translucent.
2. In a large bowl, whisk together 8 eggs, 1 cup of milk, 1/2 cup of grated Parmesan cheese, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
3. Add the cooked sausage mixture, as well as 1 cup of frozen spinach that’s been thawed and squeezed dry, 1 cup of shredded mozzarella cheese, and 1/2 cup of chopped fresh parsley. Mix well and pour the mixture into a greased 9×13 inch baking dish.
4. Bake for 30 minutes or until the center is set, then let stand for 10 minutes before serving. This delicious casserole is perfect for any night of the week!

- 1 large onion, chopped
- 3 cloves garlic, minced
- 8 eggs
- 1 cup 2% milk
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup frozen spinach, thawed and squeezed dry
- 1 cup shredded mozzarella cheese
- 1/2 cup chopped fresh parsley
Instructions
- Preheat oven to 350°F. Grease a 9×13 inch baking dish. In a large skillet over medium heat, cook sausage, onion, and garlic until sausage is no longer pink and the onion is translucent.
- Drain fat. In a large bowl, whisk together eggs, milk, Parmesan cheese, salt, and pepper. Add spinach, sausage mixture, mozzarella cheese, and parsley. Mix well. Pour egg mixture into prepared baking dish.
