Ingredients
1.4 lb boneless, skinless chicken thighs, cut into bite-sized pieces
1 tablespoon minced garlic
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup unsalted butter
2 tablespoons olive oil
2 cups diced potatoes
1/2 cup chicken broth
Instructions
1. Preheat oven to 375 degrees F (190 degrees C).
2. In a large skillet over medium-high heat, melt butter with olive oil. Add chicken, garlic, salt and black pepper. Cook until browned.
3. Remove chicken and potatoes from skillet and set aside.
4. Add chicken broth to skillet and scrape the bottom to remove any browned bits of food.
5. Stir in potatoes, cover skillet tightly with aluminum foil, and bake for 25 minutes. Remove foil, stir chicken back into the skillet, re-cover with foil, and continue baking until potatoes are tender, about 5 more minutes.
