Ingredients

  • 2 tbsp. olive oil, divided 
  • 5 cloves garlic, unpeeled 
  • 1 lb. carrots (about 6), peeled and cut on the diagonal into 1-inch pieces 
  • Salt and pepper to taste 
  • 3 tbsp. honey 

Instructions

  1. Preheat oven to 375°F. Line a baking sheet with foil or parchment paper. 
  2. Place garlic on prepared pan and drizzle with 1 tablespoon of the olive oil. 
  3. Season to taste with salt and pepper, and wrap loosely in foil. 
  4. Roast garlic for 18-20 minutes, until soft and fragrant. 
  5. Meanwhile, toss carrots in a bowl with remaining 1 tablespoon of olive oil and season with salt and pepper. 
  6. When garlic is ready, remove it from the oven and let cool. 
  7. Unwrap garlic cloves, squeeze out the roasted flesh into a small bowl and mash with a fork to form a paste. 
  8. Mix in honey, stirring well until combined. Combine carrots and garlic mixture in a large baking dish; toss well to coat evenly with honey mixture. 
  9. Return carrots to the oven and roast for another 10 minutes, until tender. Serve immediately with a garnish of chopped parsley or scallions if desired.
