Ingredients
- 2 tbsp. olive oil, divided
- 5 cloves garlic, unpeeled
- 1 lb. carrots (about 6), peeled and cut on the diagonal into 1-inch pieces
- Salt and pepper to taste
- 3 tbsp. honey
Instructions
- Preheat oven to 375°F. Line a baking sheet with foil or parchment paper.
- Place garlic on prepared pan and drizzle with 1 tablespoon of the olive oil.
- Season to taste with salt and pepper, and wrap loosely in foil.
- Roast garlic for 18-20 minutes, until soft and fragrant.
- Meanwhile, toss carrots in a bowl with remaining 1 tablespoon of olive oil and season with salt and pepper.
- When garlic is ready, remove it from the oven and let cool.
- Unwrap garlic cloves, squeeze out the roasted flesh into a small bowl and mash with a fork to form a paste.
- Mix in honey, stirring well until combined. Combine carrots and garlic mixture in a large baking dish; toss well to coat evenly with honey mixture.
