Ingredients
- 1 chicken, cut into pieces
- 1 tsp allspice
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 1 onion, diced
- 3 cloves garlic, minced
- 3 scallions, thinly sliced
- cup vegetable oil
- 2/3 cup pineapple juice
- 2 tbsp soy sauce
- 2 tbsp brown sugar
- 2 tsp hot pepper sauce (such as Tabasco)
Instructions
1. In a bowl, combine all of the spices – allspice, cumin, salt and black pepper. Sprinkle the spice mixture over the chicken pieces and stir to coat.
2. In a large skillet or wok, heat the oil over medium-high heat. Add the onion and garlic and cook for about 5 minutes, or until the onion is soft.
3. Add the chicken to the skillet and cook for about 5 minutes per side, or until browned.
4. Add the remaining ingredients and bring to a boil. Reduce the heat and simmer for about 20 minutes, or until the chicken is cooked through.
