Description
This delectable dish is the perfect Sunday night dinner. It’s made for busy weeknights, or lazy Sundays when you need to feel like you’re having a home cooked meal without all the work.
Ingredients
-8 chicken thighs (skin on)
-1/2 cup all-purpose flour
-1 teaspoon smoked paprika
-1 teaspoon garlic powder
-1/4 teaspoon cayenne pepper
-Kosher salt and freshly ground black pepper to taste
-3 tablespoons unsalted butter
-1 large lemon, juiced
-1/2 cup chopped shallots
-1 cup heavy cream
-2 tablespoons chopped fresh parsley leaves
Instructions
1. In a gallon size Ziplock bag, combine paprika, garlic powder, cayenne pepper and salt and black pepper to taste.
2. Season chicken thighs with salt and black pepper on both sides and place into the plastic bag with the flour mixture. Shake well to coat fully. Set aside.
3. Heat butter in a 12-inch heavy bottomed skillet over medium high heat.
4. Cook chicken, skin side down until golden brown, about 5 minutes per side.
5. Remove the chicken from the pan and set aside on a plate or dish to rest.
6. Add lemon juice to the pan and stir with a wooden spoon, deglazing the pan over medium-high heat for 1 minute.
7. Add shallots and cook until tender about 3 minutes.
8. Whisk in the cream and cook for another 2 minutes or until thickened slightly.
