4 eggs, beaten

1 cup sugar

1/2 cup vegetable oil

1 teaspoon vanilla extract

2 cups all-purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

3 cups mandarin oranges, peeled and sectioned

Confectioners’ sugar for dusting
