Description

Ingredients

4 large russet potatoes

8 eggs

1 tablespoon olive oil

salt and pepper to taste


Instructions

1. Preheat oven to 350 degrees Fahrenheit. 

2. Cut potatoes into thin slices, about 1/4-inch thick. 

3. Crack eggs into a bowl and whisk until smooth. 

4. In a small bowl, mix together olive oil, salt, and pepper. 

5. Brush each slice of potato with olive oil mixture and then place on a baking sheet. 

6. Spoon egg mixture into the center of each slice of potato. 

7. Bake in preheated oven for about 40 minutes, until eggs are set.
