Description
Tomato and Bacon Pie. This dish is perfect for a summer barbecue, and it’s sure to be a hit with your guests!
Ingredients
1 bacon slice, diced
1 small onion, diced
2 cloves garlic, minced
4 tomatoes, diced
¼ teaspoon sugar
salt and pepper to taste
pie crust (homemade or store-bought)
1 egg, beaten
Instructions
1. Preheat oven to 375 degrees F (190 degrees C).
2. In a skillet over medium heat, cook the bacon until crisp. Remove with a slotted spoon and drain on paper towels.
3. Add the onion and garlic to the bacon fat and cook until soft. Remove from heat.
4. Mix the bacon, onion, garlic, tomatoes, sugar, salt and pepper together in a large bowl. Pour into pie crust and cover the edges of the crust with foil.
5. Make steam vents (holes) in the center of the pie, and brush beaten egg over the top.
6. Bake for 45 minutes until golden brown.
