Twix Cookie Cups is a great and tasty new desserts that is perfect for when you crave something sweet, or if you need to bring dessert to your next event. This amazing cookie is soft and chewy with the delicious flavor of Twix candy bars in each one.
Ingredients
1 cup (2 sticks) unsalted butter, at room temperature
1 cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
FILLING:
6 tablespoons smooth peanut butter
4 tablespoons (1/2 stick) unsalted butter, at room temperature
1/2 cup confectioners’ sugar
1/4 cup light corn syrup
1 teaspoon pure vanilla extract
24 individual Twix bars
Instructions
1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
2. In a bowl of an electric mixer fitted with the paddle attachment, cream together butter and sugar until light and fluffy. Add eggs, one at a time, beating after each addition. Mix in vanilla.
3. In a separate bowl whisk together flour, baking powder and baking soda; add to wet mixture and mix until just combined. Dough will be thick and sticky. Using an ice-cream scoop or a spoon, place dough onto prepared baking sheets. Gently press down on top of dough to flatten slightly.
4. Bake in preheated oven for 10 minutes or until cookies are golden brown and set. Let cool completely on wire rack before filling.
5. To make Filling: In a bowl of an electric mixer fitted with the paddle attachment, beat together peanut butter and butter until smooth. Add confectioners’ sugar, corn syrup and vanilla; mix until well-combined. Transfer to a pastry bag fitted with a small round tip (the size of the tip will depend on how thick you want your filling).
6. To assemble Cookie Cups: Pipe approximately 1 teaspoon of filling into the bottom of one cookie. Place a Twix bar over the filling, pressing down to spread filling to edges. Top with another cookie and press down lightly to seal the edges together. Store in an airtight container for up to 4 days or freeze for up to 2 weeks. Let thaw before serving.
7. To make Cupcakes: Fill a piping bag with 1/2 cup chocolate frosting. Pipe a circle of frosting into the center of 24 cupcakes and top with a cookie cup.
