Warm Dijon Potato Salad

Is it summer yet? I am so ready for the warm weather, but there are still a few weeks left of winter! So to get me through these last few weeks, I’ve been cooking up some yummy recipes like this one. It’s not too late to make something new and different for your family before spring comes around! This recipe is easy and delicious. You can’t go wrong with potatoes, eggs, celery, onion, salt & pepper in a creamy sauce made from Dijon mustard (my favorite) mixed with mayonnaise (or olive oil). The best part is that you don’t need any fancy ingredients or complicated steps – just grab what you have in your kitchen and start cooking!

Ingredients:

½ red onion, thinly sliced

1 ½ tablespoons Dijon mustard

½ cup reduced-fat mayonnaise

5 red potatoes

¼ teaspoon ground black pepper

4 teaspoons cider vinegar

½ teaspoon cayenne pepper

2 tablespoons grated Parmesan cheese

¼ teaspoon paprika

½ teaspoon salt

2 green onions, chopped

Instructions:

Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and cut into cubes.

Combine mayonnaise, Parmesan cheese, Dijon mustard, vinegar, cayenne pepper, salt, black pepper, and paprika in a large bowl. Add potatoes, red onion, and green onions; gently toss to combine.
