This recipe for wilted cabbage salad with Bacon is a surefire way to get your kids to eat their veggies. With bacon and Parmesan cheese, it’s hard not to love this dish! I make it all the time because it’s so quick and easy- only 10 minutes from start to finish. It goes well with anything from grilled meats or fish, roasted chicken or turkey, chopped salads or pasta dishes. The best part about this recipe is that you can use any kind of cabbage you want: green cabbage, red cabbage, purple cabbage- they’re all delicious!

1 clove garlic, minced
1 medium head cabbage, shredded
½ pound bacon
½ cup tarragon vinegar
1 onion, chopped
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove bacon, crumble and set aside. Reserve bacon fat.
Add the onion and garlic and fry in the bacon fat until browned.
Add the vinegar. Bring to a simmer and add the cabbage and bacon. Saute briefly and serve warm.
