Italian Sausage Soup with Orzo

Ingredients
  

  • ½ lb Italian sausage
  • 1 teaspoon olive oil
  • ½ red onion diced
  • 3 cloves garlic finely minced
  • 2 celery stalks diced
  • ½ cup uncooked orzo pasta
  • 6 cups chicken stock
  • 1 15 oz can diced tomatoes
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon salt
  • Black pepper to taste

Instructions
 

  • Brown the SausageHeat olive oil in a pan. Cook Italian sausage until browned, breaking it into small pieces. Drain and set aside.
  • Sauté VegetablesIn the same pan, sauté onion, garlic, and celery for 3-4 minutes.
  • Toast the OrzoAdd orzo and toast for 2-3 minutes.
  • Combine IngredientsAdd chicken stock, diced tomatoes, Italian seasoning, salt, and pepper. Stir well and return sausage to the pot.
  • SimmerBring to a boil, then reduce heat and simmer for 10-15 minutes, until orzo is tender.
  • ServeLadle into bowls and enjoy hot!
