celery stalks

uncooked orzo pasta

chicken stock

15 oz can diced tomatoes

teaspoon
dried Italian seasoning

teaspoon
salt
Black pepper
to taste
Instructions
Brown the Sausage
Heat
olive oil
in a pan. Cook
Italian sausage
until browned, breaking it into small pieces. Drain and set aside.
Sauté Vegetables
In the same pan, sauté
onion
,
garlic
, and
celery
for 3-4 minutes.
Toast the Orzo
Add
orzo
and toast for 2-3 minutes.
Combine Ingredients
Add
chicken stock
,
diced tomatoes
,
Italian seasoning
,
salt
, and
pepper
. Stir well and return sausage to the pot.
Simmer
Bring to a boil, then reduce heat and simmer for 10-15 minutes, until orzo is tender.
Serve
Ladle into bowls and enjoy hot!
