Zucchini Tomato Soup I

I was looking for a recipe with zucchini for my blog. I wanted to find something that would be really healthy and easy to make. I found this yummy Zucchini Tomato Soup recipe, it’s also gluten free! The best part is the kids will love it too because of how creamy it is.
I had all the ingredients except for one so I substituted that ingredient with another veggie but you can just use what ever vegetable you have on hand or what ever your family prefers, maybe broccoli instead of cauliflower? It’s up to you! Give this yummy Zucchini Tomato Soup I a try soon!

2 pounds ground beef

1 onion, chopped

4 cups water

8 cups chopped tomatoes

¼ tablespoon garlic powder

1 green bell pepper, chopped

6 zucchinis, cubed

2 (1.25 ounce) packages beef with onion soup mix

salt to taste

2 teaspoons dried oregano

2 cups macaroni


In a large stock pot combine tomatoes, water, soup mix, onion, green bell pepper and zucchini. Season with oregano, garlic powder and salt. Bring to a boil.

Using a saute pan brown ground beef and then add to stock pot. Add macaroni and cook until noodles and zucchini are tender, approximately 10 to 15 minutes.
