Ingredients
  

  • For the Chicken:
  • 2 large boneless skinless chicken breasts, sliced horizontally to make 4 fillets
  • 1 tablespoon fresh oregano or parsley leaves for garnish
  • For the Garlic Mayonnaise:
  • ¼ cup mayonnaise
  • 2 garlic cloves minced
  • ½ teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder optional
  • Salt to taste
  • For the Parmesan Coating:
  • 1 cup freshly grated Parmesan cheese
  • ½ cup panko breadcrumbs

Instructions
 

  • Preheat your air fryer to 390°F (199°C).
    Slice each chicken breast in half horizontally to create 4 fillets. Place the chicken on a cutting board, cover with plastic wrap, and pound into even pieces with a rolling pin or meat tenderizer.
    In a small bowl, mix together the mayonnaise, minced garlic, onion powder, Italian seasoning, garlic powder, and salt. Spread this mixture evenly over each fillet.
    In a shallow bowl, combine the panko breadcrumbs and grated Parmesan cheese. Dredge each fillet in the Parmesan mixture, pressing lightly with tongs to ensure the coating sticks. Shake off any excess coating.
    Place the coated chicken fillets in the air fryer basket and cook for 10-12 minutes, or until golden brown and the internal temperature reaches 165°F (74°C). After 5-6 minutes of cooking, remove the basket and carefully flip the chicken using tongs.
    Garnish with fresh oregano or parsley before serving.
