Ingredients
  

  • For the Cookie Dough:
  • ½ cup butter softened
  • ½ cup white sugar
  • ½ cup brown sugar
  • ½ teaspoon vanilla extract
  • ¼ teaspoon mint extract
  • 1 large egg
  • 1 cup all-purpose flour
  • ½ cup cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup Andes mint baking pieces
  • For the Mint Topping:
  • 24 Andes mints

Instructions
 

  • Prepare the Dough: Cream butter and sugars, add extracts and egg, and mix in dry ingredients. Fold in Andes mint pieces.
  • Chill: Roll dough into 1-inch balls and refrigerate for 2 hours.
  • Bake: Bake at 350°F for 9-11 minutes.
  • Top: Add Andes mints to warm cookies, let melt, and spread.
