- For the Cookie Dough:
- ½ cup butter softened
- ½ cup white sugar
- ½ cup brown sugar
- ½ teaspoon vanilla extract
- ¼ teaspoon mint extract
- 1 large egg
- 1 cup all-purpose flour
- ½ cup cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- ¾ cup Andes mint baking pieces
- For the Mint Topping:
- 24 Andes mints
Prepare the Dough: Cream butter and sugars, add extracts and egg, and mix in dry ingredients. Fold in Andes mint pieces.
Chill: Roll dough into 1-inch balls and refrigerate for 2 hours.
Bake: Bake at 350°F for 9-11 minutes.
