Ingredients
  

  • For the Crust
  • 1 ⅔ cups finely crushed saltine crackers about 1 sleeve
  • 6 tablespoons butter melted
  • 3 ½ tablespoons granulated sugar
  • 1 egg white lightly beaten
  • ½ teaspoon salt
  • For the Filling
  • 1 14 oz can sweetened condensed milk
  • 4 egg yolks lightly beaten
  • ¼ cup fresh lime juice about 2-3 large limes
  • ¼ cup fresh lemon juice about 2 lemons
  • For Topping
  • Whipped cream
  • Lime zest optional

Instructions
 

  • Preheat the OvenPreheat oven to 350°F (175°C).
  • Make the CrustMix saltines, butter, sugar, egg white, and salt in a bowl. Press into a 9-inch pie dish and chill for 25 minutes. Bake for 18-20 minutes until golden. Cool.
  • Prepare the FillingWhisk together condensed milk and egg yolks. Add lime juice and lemon juice, whisking until smooth.
  • Bake the PiePour filling into the crust and bake for 15 minutes, until the center has a slight jiggle. Cool to room temperature, then chill for 2 hours.
  • ServeTop with whipped cream and lime zest before serving.
