Ingredients
  

  • 2 pounds mushrooms
  • 1 tablespoon oil
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons soy sauce or tamari
  • 3 cloves garlic chopped
  • ½ teaspoon thyme chopped (or ¼ teaspoon dried thyme)
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 400°F (200°C). Clean and slice the mushrooms as needed.
  • In a large bowl, combine oil, balsamic vinegar, soy sauce, garlic, thyme, salt, and pepper. Toss the mushrooms in the mixture until fully coated.
  • Spread the mushrooms in a single layer on a parchment-lined baking sheet.
  • Roast for 20 minutes, stirring halfway through, until the mushrooms are tender and slightly caramelized.
  • Serve hot and enjoy!
