  • 1 can 14.5 oz diced tomatoes, with juice
  • 1 can 10 oz Rotel diced tomatoes and green chilies, with juice
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • 1 can 6 oz tomato paste
  • Noodle Layer
  • 1 package 6 oz medium egg noodles
  • 1 cup sour cream
  • Cheese Topping
  • 1 cup shredded cheddar cheese
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese

Instructions
 

  • Preheat Oven: Preheat oven to 350°F (175°C). Lightly spray a 9×13-inch baking dish with cooking spray.
  • Cook Ground Beef: In a large skillet, cook ground beef over medium heat until no longer pink. Drain excess fat.
  • Add Tomatoes and Seasonings: Stir in diced tomatoes with juice, Rotel, salt, black pepper, onion powder, garlic powder, and tomato paste. Simmer for 20 minutes on low heat, stirring occasionally.
  • Cook Noodles: Boil egg noodles in salted water until al dente, then drain.
  • Combine Noodles and Sour Cream: In a mixing bowl, combine the hot noodles with sour cream.
  • Assemble Casserole: Spread sour cream-coated noodles in the baking dish. Spoon meat sauce over noodles.
  • Add Cheese Topping: Mix cheddar, Parmesan, and mozzarella in a bowl. Sprinkle over the meat sauce.
  • Bake: Cover with foil and bake for 35 minutes. Uncover and bake for an additional 5-10 minutes until cheese is golden.
  • Serve: Let the casserole rest for 5 minutes before serving.
