10-oz can tomatoes with green chilies, undrained

chipotle adobo sauce

start with half a lime
Instructions
Heat olive oil in a pot over medium-high heat. Sauté onion, bell peppers, and jalapeño until softened.
Stir in garlic and seasonings; cook until fragrant.
Add chicken breasts, canned tomatoes, chicken broth, chipotle adobo sauce, and lime juice. Stir and bring to a simmer.
Cover and simmer for 30 minutes.
Remove chicken, shred with forks, and return to the pot. Stir well.
Adjust seasoning and lime juice to taste. Serve with toppings of choice.
