Ingredients
  

  • Soup Base:
  • 2 tablespoon olive oil
  • 1 cup chopped onion
  • 2 cups chopped bell pepper
  • 1 jalapeño seeded and diced
  • 3 garlic cloves minced
  • Seasonings:
  • 1 tablespoon chili powder
  • 2 teaspoon each: paprika cumin, garlic powder, onion powder
  • 1 teaspoon salt
  • Main Ingredients:
  • 2 lbs chicken breast
  • 1 10-oz can tomatoes with green chilies, undrained
  • 32 oz chicken broth
  • 1.5 tablespoon chipotle adobo sauce
  • 2 tablespoon lime juice start with half a lime

Instructions
 

  • Heat olive oil in a pot over medium-high heat. Sauté onion, bell peppers, and jalapeño until softened.
  • Stir in garlic and seasonings; cook until fragrant.
  • Add chicken breasts, canned tomatoes, chicken broth, chipotle adobo sauce, and lime juice. Stir and bring to a simmer.
  • Cover and simmer for 30 minutes.
  • Remove chicken, shred with forks, and return to the pot. Stir well.
  • Adjust seasoning and lime juice to taste. Serve with toppings of choice.
