Prep Chicken and Veggies: Cut the chicken into bite-sized pieces. Dice the bell pepper, onion, and jalapeño, and mince the garlic.
Sauté Chicken and Veggies: Heat 1 tablespoon oil in a skillet over medium-high heat. Add chicken and taco seasoning, cooking for 4-5 minutes. Add bell pepper, onion, and garlic, and cook another 5 minutes until chicken is cooked through. Set aside.
Assemble Quesadillas: To the same skillet, add ½ teaspoon oil. Place a flour tortilla in the skillet, add a layer of cheese, then ¼ of the chicken mixture, and top with more cheese. Fold the tortilla in half and cook for 1-2 minutes per side until golden and crispy.
Serve: Slice each quesadilla into halves or thirds. Serve with sour cream, salsa, guacamole, or your favorite dipping sauce.
