Ingredients
  

Main Ingredients

  • 2 large large eggs, room temperature Make sure your eggs are at room temperature.
  • ½ cup granulated sugar
  • 1 cup all-purpose flour, sifted
  • ½ teaspoon baking powder
  • teaspoon salt
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon ground cloves
  • ½ cup unsalted butter, melted and cooled
  • 1 teaspoon vanilla
  • 1 tablespoon powdered sugar (to sprinkle on top)

Instructions
 

Preparation

  • Melt the butter in a small bowl and set aside to cool.
  • In a medium bowl, beat together the sugar, eggs, and vanilla for 5-7 minutes until pale and tripled in volume.
  • In another bowl, combine the flour, baking powder, salt, and spices; whisk to combine.
  • Gently fold half of the flour mixture into the egg batter, then fold in the rest.
  • Stir about ¼ cup of the batter into the cooled melted butter, then fold this back into the main batter.
  • Chill the batter for 30 minutes.

Baking

  • Preheat the oven to 350°F (175°C) and prepare the Madeleine pan by buttering and flouring it.
  • Spoon a tablespoon of batter into each mold.
  • Bake for 10-12 minutes until golden brown.
  • Let cool for 5 minutes before removing from the pan.
  • Sprinkle powdered sugar on top before serving.

Notes

Best served warm or at room temperature on the same day. Store leftovers in an airtight container at room temperature.
