Ingredients
  

  • 10 ounces fresh white mushrooms cleaned
  • 1 cup all-purpose flour
  • ½ cup cornstarch
  • ¾ teaspoon baking powder
  • ¼ teaspoon fine salt
  • 1 cup cold water
  • 2 cups Panko breadcrumbs

Instructions
 

  • Prepare the Batter: In a stainless steel or glass bowl, sift together flour, cornstarch, baking powder, and salt. Gradually add cold water, whisking until smooth.
  • Dip the Mushrooms: Insert a toothpick into each mushroom, then dip each one into the batter. Let the excess drip off.
  • Coat with Panko: Roll the dipped mushrooms in Panko breadcrumbs, ensuring an even coating.
  • Heat Oil: Heat oil to 375°F (190°C) in a deep pot.
  • Fry the Mushrooms: Carefully place mushrooms in hot oil. Fry until golden brown, about 2-4 minutes per batch.
  • Drain and Serve: Place fried mushrooms on a wire rack or paper towels. Serve immediately with your favorite dipping sauce.
