Ingredients
  

Cake Ingredients

  • 2 cups whipping cream
  • 4 tablespoons icing sugar rounded
  • 2 teaspoons vanilla extract
  • 3 cups dark chocolate chips
  • ½ cup whipping cream slightly warmed
  • 2 cups sugar
  • 2 cups all-purpose flour
  • ¾ cup cocoa
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 eggs large eggs
  • 1 cup soured milk add a tablespoon of lemon juice or vinegar to regular milk
  • 1 cup black coffee
  • ½ cup vegetable oil
  • 1 pound ripe fresh cherries pitted
  • 1 cup chopped chocolate for garnish

Whipped Cream Ingredients

  • 2 cups whipping cream
  • 4 tablespoons icing sugar
  • 2 teaspoons vanilla extract

Instructions
 

Preparation

  • Combine all the cake ingredients in a mixing bowl and beat with an electric mixer for 2 minutes.
  • Pour the batter into 2 greased and floured (or dusted with cocoa) 9-inch cake pans.
  • Bake at 350 degrees F for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • Cool completely on a wire rack.
  • When cooled, split the two layers into four using a sharp serrated bread knife.

Ganache Preparation

  • Melt together the 3 cups of dark chocolate chips and ½ cup of cream in a double boiler, stirring constantly until melted and smooth. Ensure it remains lukewarm.
  • Transfer the melted chocolate to a large mixing bowl.
  • In another bowl, whip the 2 cups of whipping cream to firm peaks.
  • Gently fold the whipped cream into the chocolate mixture in four portions. Chill if too soft to work with, folding occasionally.

Assembly

  • Whip the vanilla whipped cream ingredients together to firm peaks.
  • Place the first layer of cake on a plate and cover it with vanilla whipped cream, then add the next layer of cake.
  • Spread a thin layer of the whipped chocolate ganache on this layer.
  • Add a layer of pitted cherries followed by more whipped ganache.
  • Continue with the remaining layers of cake, repeating the process.
  • Frost the entire outside of the cake with the remaining ganache.
  • Top with another layer of pitted cherries.
  • Garnish with borders of vanilla whipped cream and chopped chocolate on the sides.

Notes

Measure ingredients accurately for the best results. Let the cake cool completely before frosting to prevent melting the ganache. If you prefer a sweeter cake, adjust the sugar in the recipe. Use high-quality chocolate for the best flavor in the ganache. Leftover cake can be stored in an airtight container in the refrigerator for up to 5 days or frozen for up to 3 months.
