  • 2 lbs Boneless Skinless Chicken Breast
  • 2 boxes Stovetop Chicken Stuffing Mix
  • 2 cans Cream of Chicken Soup
  • 1 can Chicken Broth (14.5 oz)
  • Salt & Pepper to taste

Instructions
 

Preparation

  • Spray the slow cooker with non-stick cooking spray.
  • Coat each chicken breast with salt and pepper to taste. Optionally, add a pinch of cayenne for spice.
  • Lay the chicken breasts at the bottom of the slow cooker.
  • Pour the chicken stuffing mix over the chicken in the slow cooker.
  • In a medium bowl, whisk together the two cans of cream of chicken soup and the chicken broth.
  • Pour the soup and broth mixture over the stuffing.
  • Lightly mix the stuffing and soup mixture in the crockpot to prevent sticking.

Cooking

  • Cook on low for 7 hours or high for 4 hours.
  • Once done, mix the stuffing and soup mixture again.

Notes

This dish is great for making sandwiches. Serve with bread or rolls and a side salad or steamed vegetables. To enhance flavor, ensure chicken is well-seasoned and consider adding extra cream of chicken soup for a creamier texture. For a crunchy topping, sprinkle crushed crackers or breadcrumbs for the last 30 minutes of cooking. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
