Ingredients
  

  • - 4 cups sweet corn off the cob or frozen defrosted
  • - 1 cup sliced cherry tomatoes
  • - 1 green pepper diced
  • - ½ cup red onions sliced
  • - 3 tablespoons olive oil
  • - Juice of 1 lime
  • - Zest of 1 lime
  • - Salt & pepper to taste
  • - ⅓ cup chopped cilantro

Instructions
 

  • 1. In a medium bowl, add the sweet corn, cherry tomatoes, green pepper, red onions, olive oil, lime juice, lime zest, salt, pepper, and chopped cilantro.
    2. Give all the ingredients a good stir to combine and evenly coat with the dressing.
    3. Cover the bowl with Saran Wrap and refrigerate for at least an hour before serving.
    4. Serve chilled and enjoy this refreshing summer salad.
