1.25kgwhite potatoespeeled and cut into 4 cm pieces
50gunsalted butterfinely diced
1clovegarlicthinly sliced
40gFrench onion soup mix
375mlboiling water
2sprigs fresh rosemary
15mlextra virgin olive oil
2brown onionsfinely sliced
15mlbrown sugar
Additional fresh rosemary for garnishing
Instructions
Preheat oven to 200°C (180°C fan-assisted).
In a large roasting pan, toss the potatoes with butter and garlic. Sprinkle with soup mix and pour over boiling water. Add rosemary sprigs, season with salt and pepper.
Bake for 30 minutes, stirring halfway.
Caramelize onions in olive oil over medium-low heat for 10 minutes. Add brown sugar and cook for 5 more minutes. Remove from heat.
Spoon caramelized onions around the potatoes and bake for an additional 5-10 minutes until potatoes are tender.
Remove rosemary sprigs and serve, garnished with fresh rosemary.
