Ingredients
  

  • 8-10 breakfast sausages
  • 8-10 slices of white or wheat sandwich bread
  • 2 large eggs
  • ¼ cup milk
  • ¼ teaspoon ground cinnamon
  • A splash of vanilla extract
  • Butter for greasing the pan
  • Maple syrup for serving

Instructions
 

  • Cook sausages according to package directions. Set aside.
  • Trim crusts from bread slices and flatten with hands or rolling pin.
  • Whisk eggs, milk, cinnamon, and vanilla in a shallow bowl.
  • Roll each sausage in a slice of bread and trim ends if desired.
  • Heat butter in a skillet over medium heat.
  • Dip each roll-up into the egg mixture, let excess drip off, and cook in the skillet, turning to brown all sides (about 2-3 minutes per side).
  • Serve warm with maple syrup for dipping.
