Ingredients
  

  • cup cornmeal
  • cup self-rising flour
  • cup low-fat buttermilk
  • 1 large egg
  • Oil for frying about 3 tablespoon coconut oil or your choice

Instructions
 

  • Mix the cornmeal, self-rising flour, buttermilk, and egg in a bowl until just combined and moist.
  • Heat oil in a skillet over medium heat.
  • Drop spoonfuls of the mixture into the skillet and flatten slightly. Cook for 2-3 minutes per side, or until golden brown.
  • Remove from the skillet and place on paper towels to absorb excess oil.
  • Serve warm and enjoy!
