- ⅔ cup cornmeal
- ⅓ cup self-rising flour
- ⅓ cup low-fat buttermilk
- 1 large egg
- Oil for frying about 3 tablespoon coconut oil or your choice
Mix the cornmeal, self-rising flour, buttermilk, and egg in a bowl until just combined and moist.
Heat oil in a skillet over medium heat.
Drop spoonfuls of the mixture into the skillet and flatten slightly. Cook for 2-3 minutes per side, or until golden brown.
Remove from the skillet and place on paper towels to absorb excess oil.
