Ingredients
  

  • 1 16-ounce box ginger snap cookies (1 pound)
  • 8 ounces cream cheese softened
  • 16 ounces white almond bark 1 pound
  • Sprinkles or crushed ginger snaps optional

Instructions
 

  • Line a baking sheet with parchment or wax paper.
  • Crush ginger snap cookies into fine crumbs using a food processor.
  • In a large bowl, beat the cookie crumbs and softened cream cheese until fully combined.
  • Roll mixture into 1-tablespoon balls and place on the prepared baking sheet. Freeze for 30 minutes.
  • Melt almond bark in a microwave-safe bowl according to package directions.
  • Dip each truffle ball into the melted bark, coat completely, and place on the baking sheet.
  • Decorate with sprinkles or crushed ginger snaps while the coating is still wet.
  • Chill in the refrigerator for 10-15 minutes until the coating is set.
