Ingredients
  

  • 3 cups 500 grams blanched almonds or almond flour
  • 1 cup powdered sugar
  • 1 egg white
  • ½ teaspoon almond extract optional
  • Pinch of salt optional

Instructions
 

  • Prepare Almonds: If using whole almonds, blanch and peel them. Skip this step if using almond flour.
  • Grind Almonds: In a food processor, grind almonds until finely ground.
  • Combine Ingredients: Add powdered sugar, egg white, almond extract, and salt. Process until a smooth dough forms.
  • Adjust Consistency: Add water or oil, 1 teaspoon at a time, if the paste is too dry.
  • Shape and Store: Wrap tightly in plastic wrap and refrigerate for up to 2 weeks or freeze for up to 3 months.
