gluten-free all-purpose flour

olive oil
½
yellow onion
chopped large

garlic cloves
minced

large carrot
cut into 2-inch chunks
2
Yukon Gold potatoes
diced into 2-inch pieces

beef broth
¼
cup
tomato paste

tablespoon
Worcestershire sauce
1
bay leaf
2
teaspoon
fresh thyme leaves
for garnish
Instructions
Preheat oven to 325°F (160°C).
Season beef chunks with salt and pepper. Toss with flour to coat evenly.
Heat olive oil in a Dutch oven over medium heat. Brown the beef in batches for 3-4 minutes per side. Transfer to a plate.
Add onions, garlic, and carrots to the pot. Cook for 2-3 minutes, stirring occasionally.
Add potatoes, beef broth, tomato paste, Worcestershire sauce, bay leaf, and thyme. Scrape the browned bits from the bottom.
Bring to a simmer and return the beef to the pot. Cover and transfer to the oven.
Cook for 2-2.5 hours or until beef is tender. Remove bay leaf and serve warm.
