Honey Soy Chicken Breasts

Ingredients
  

Marinade

  • ¼ cup honey
  • cup low sodium soy sauce
  • ½ teaspoon black pepper
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger root, grated

Chicken

  • 24 ounces chicken breast

Instructions
 

Preparation

  • Mix together all the marinade ingredients (honey, soy sauce, black pepper, minced garlic, and grated ginger) in a bowl.
  • Pour the marinade into a large Ziploc bag and add the chicken breasts, ensuring they are well coated.
  • Seal the bag and refrigerate for a couple of hours, or ideally overnight.

Cooking

  • Preheat your oven to 375 degrees F (190 degrees C).
  • Line a cookie sheet with aluminum foil and place the marinated chicken on it.
  • Bake uncovered for about 45 minutes, or until the internal temperature reaches between 170 and 180 degrees F (77 to 82 degrees C).
  • While the chicken is baking, simmer the leftover marinade over low heat and brush it onto the chicken every 10 minutes.

Serving

  • Serve hot with steamed rice, stir-fried vegetables, or a fresh salad. Garnish with chopped green onions or sesame seeds if desired.

Notes

For additional flavor, consider adding lime juice or red pepper flakes to the marinade. Grilling the marinated chicken is also an option.
